THE BUTCHERS CABINET

The Butchers Cabinet provides a wide variety of grass-fed beef cuts in retail pack sizes. This provides an opportunity to become familiar with the various nose to tail cuts and the appropriate cooking methods which deliver the best eating experience for that cut. Once hooked on the endless possibilities of slow cooking methods and the uplift in flavour and taste from the lesser cuts, most people gain the confidence to order larger quantities in bulk.

“Customised ordering” enables you to select the size and cuts your require, and allows us to pass on the handling efficiencies and storage savings for larger quantities. For this reason, it is only offered on quarter (40-50kg), half (80-100kg) and whole (160-200kg) grass-fed beef carcass lots.

Simply select the carcass portion (quarter, half or whole), pay the deposit via the cart, and customise your order. We will weigh and calculate the price of the carcass portion and advise you of the amount owing. The $250, $500 or $750 amount paid via the cart is a Deposit payment only to confirm your order.

THE GRASS-FED BEEF CARCASS

  • Ordering Grass-Fed Beef on a carcass basis is an economical way to purchase guaranteed grass-fed beef quality and provenance, saving up to 25%.
  • A typical whole grass-fed beef carcass varies from animal to animal in the range 180-220kg. You can order whole, half or quarters. The Beef is dry-aged for 7-10 days before breaking down into the various cuts ordered.
  • It is packed in vacuum-sealed plastic bags, chilled and boxed for handling and easy sharing. We have considered the practicality of sharing and splitting whole or part carcass orders with family and friends. It is, for this reason, we have chosen cryovac sealing of each portion in durable packaging for subsequent re-handling and freezing for storage if required.
  • From a “whole beast” carcass you can expect to receive a fair proportion of T-bone/sirloin, eye fillet, rump, round, topside, silverside, gravy beef, osso bucco, blade, oyster blade, chuck roast, brisket, rib fillet and spare ribs.
  • You also get mince, sausages, bones for soup and broth and pet dogs.

COST BASE AND BENEFIT OF ORDERING BY CARCASS PORTION

  • The price you pay is set based upon the “Hot Carcass weight” also known as the “Dressed Weight” and is determined at the meatworks. This is the historical value transfer point in the distribution chain and we calculate the final price of your order based upon this weight.
  • Further shrinkage occurs in the dry-aging process 7-10 days at 7C along with the large bones and excess fat which are unusable. For these reasons, the delivered weight is generally 25-30% less than the hot carcass weight.
  • We disclose and utilise this traditional industry method of valuation without which the true farm gate cost and downstream losses or shrinkage would not be apparent. In CCB we have made this step transparent so that it illuminates the value pathway from farm gate to consumer. It illustrates/highlights the losses and waste which contribute to the final high cost of retail beef in the shop. It also explains why some operators might be motivated to substitution.
  • We believe that by open disclosure of the methodology, we can be transparent in pricing, build trust in provenance and obtain a fair price from our customers.
  • Once the carcass has been weighed and hung to be dry-aged, you will be contacted to confirm the “dressed weight” and the final invoice and product data sheet will be sent to you about a week before delivery. Even when calculated on the “delivered weight”, you will discover the amazing value for high quality, hormone and antibiotic-free grass-fed beef – guaranteed.

 

DELIVERY AND STORAGE

  • The grass-fed meat is delivered chilled or frozen in approx. 10kg boxes. Inside the boxes, meat is individually cryovaced in portions and cuts labelled according to your order. The meat continues to tenderise in the chilled cryovaced bags while retaining its juicy delicious flavour.
  • The cryovaced meat may be kept refrigerated for up to four weeks before freezing if necessary to keep in storage longer. Grass-Fed Beef Steaks with bone-in ( eg TBone) are best placed immediately in the freezer unless consumed immediately.

 

FREEZER STORAGE REQUIRED

  • For a whole beast at 200kg, freezer capacity of 350L
  • For a half or side at 100kg = 175L and for a quarter at 50kg = 90L
